Abstract

Lipopurothionins, which are lipid-protein complexes extracted with petroleum ether from the endosperms of wheat and other Gramineae, are converted to a petroleum ether insoluble, chloroform-soluble form by extraction with acetone. It has been found t h at digalactosyl diglyceride (DGDG) is the only component of t he acetone ext r a ct t h at is able to restore petroleum ether solubility when added back to t he chloroform-soluble form
